Another delicious dessert recipe? Why?!
Well, for one thing, when you’re on the keto diet (nee, lifestyle) it’s easy to figure out what you’re eating for lunch and supper; meat, cheese and ALL the avocados!
When you have a sweet tooth, it’s MUCH more challenging to figure out what to eat. The best advice I can give you if you’re just starting out is to keep something keto-friendly and sweet on hand.
I have now, somehow, by the grace of God, programmed my brain to not crave sweets AT ALL, but I still keep something on hand just in case I’d have a crazy craving!
This recipe is my absolute FAVORITE! I whipped it up one evening when I felt like I wanted something sweet.
This is my keto-friendly take on a peanut butter bar.
I chose to use Almond Butter AND Peanut Butter in this recipe, but you could certainly just use all of one or the other.
Sheer laziness–I just used a fork to chop up my walnuts. Keeping the pieces a bit bigger allows for more crunch in the bar!
Here’s how to make ’em!
Preheat oven to 350°.
Ingredients for crust:
1/2 C Butter (Softened)
1/4 C Crushed Walnuts
1/2 C Coconut Flour
1/2 T Swerve
Mix the ingredients together until it forms a sandy, wet dough. Press into a well-greased 8×8 pan.
Bake for 10 minutes, or until the crust edges are brown:
Allow crust to cool.
Ingredients for mixed nut deliciousness:
1/2 C Almond Butter (no sugar, no salt added)
1/2 C Peanut Butter (no sugar added)
1/2 C Butter (Softened)
1/4 C Crushed Walnuts
1 C Swerve
1 tsp. Vanilla Extract
Toss it all in the mixer. Mix on low until all ingredients are incorporated. Then mix on high for 1-2 minutes, until it looks somewhat fluffy.
Use a spatula to scoop the mixture on top of the crust. Smooth it out and pop in the refrigerator for an hour.
Cut into bars and enjoy!
I was able to cut this into 18 pieces.
Each piece has 1.5 net carbs.
